Description

Highly resistant to cold and adapted to the European climate, the persimmon tree is undemanding and very generous in fruit. It does not require pollination to bear fruit.
Cultivated persimmons are either Asian (Diospyros lotus) or American (Diospyros virginiana) in origin.
For most varieties, the fruit is eaten very ripe, when it becomes soft and loses its astringency.
They are generally harvested while still hard, and then left to ripen slowly in a cool, shady spot (such as a balcony)
Harvesting takes place in autumn or winter, depending on the variety.
Pick with scissors, cutting off the stalk to guarantee preservation.
